At the same time it prevents pastry from dehydrating, thus lengthening the shelflive of pastry products. This cold process jelly can be used cold, directly from out of the pail. It does not run off the pastry and is freezestable and cutstable. Jelfix Mirror can easily be mixed with Fruffi, Multifill, colouring matters or flavours. In no time you create a variety of colours and flavours! Jelfix Mirror is available in pails of 3,5 kg and 7 kg

Neutral mirror jelly Put Jelfix Mirror in a bowl and shake it lightly. Do not stir!! Smoothen the jelly over the pastry with a glazingknife. Use a fork to plunge a ballcake

Mirror jelly with a warm flavour Put Jelfix Mirror in a bowl and shake it lightly. Do not stir!! Mix 1 part of Multifill with 1 part of Jelfix Mirror (1:1). Smoothen the jelly over the pastry with a glazingknife. Use a fork to plunge a ballcake.

During the processing the jelly is liquid and will retake its lightly jellyfied structure after the application
